Indulge in an unforgettable culinary evening surrounded by the warmth of Navy Hall’s historic setting, a rare opportunity to step inside a space not usually open to the public. We invite you to experience the intersection of history and modern cuisine, where celebrated Anishinaabe Chef, Joseph Shawana, presents a stunning, multi-course dinner, highlighting the rich culinary traditions and seasonal ingredients of his heritage. Each course will be thoughtfully paired with an exceptional wine from Southbrook Vineyards, creating a harmonious journey of flavour.
The evening is designed to evoke community, connection, and celebration. Guests will enjoy a progression of refined dishes — from artfully crafted canapés and a rich seasonal soup to a delicate freshwater fish course and a playful dessert finale. Each course will be introduced by the chef and sommelier, who will share the inspiration and stories behind the ingredients. Throughout the evening, guests will also experience a cultural welcome and live musical performance from Six Nations performer Ron Thomas, adding a unique and meaningful dimension to the celebration.

Navy Hall sits on lands that hold a complex and painful history, marked by the colonization of Indigenous Peoples and the displacement, violence, and systemic injustices they endured. As part of an ongoing journey towards truth and reconciliation, this event offers an opportunity to explore Indigenous foodways as a way of deepening understanding, fostering connection, and honouring the traditions that have shaped this land for millennia.
Through the artistry and stories shared by these talented chefs, we aim to celebrate the resilience, knowledge, and creativity of Indigenous cultures. By experiencing these traditional and contemporary expressions of Indigenous cuisine, guests are invited to engage in meaningful dialogue about the history of the land and the role food plays in connecting people, communities, and cultures on the path to reconciliation.

Chef Joseph Shawana
Acclaimed Chef Joseph Shawana is Odawa, part of the Three Fires Confederacy, born and raised in Wikwemikong Unceded Indian Reserve on Manitoulin Island in Ontario. Through his cooking, which creates authentic cuisine full of flavour and purpose, Joseph aims to reconnect people with Indigenous foodways and promote a greater appreciation of Indigenous culture and history by way of his mentorship from a 2 two Michelin Starred chef.
His pre-colonial approach and techniques made Kūkŭm Kitchen one of the best restaurants in Canada. It made the top spot on the Ontario food awards by winning top restaurant in the World Cuisine category, and in 2021, earned Joseph the Glenfiddich Chef of the Year Award. As the founder of Ziigwan Indigenous Culinary Experiences and the first Indigenous Culinary and Foodways Guide at Centennial College, Joseph is committed to furthering the education of Indigenous culinary foodways to all communities through his work with the Canadian Embassies in Europe.
Currently, Joseph sits on the Board of Directors for NATIFS, is the Indigenous Culinary Ambassador to Germany through the Food Embassy Berlin and is planning the launch of a new street food concept called NIichii’s Street Eats.
